Peanut Butter Banana Bread
This banana bread recipe is for peanut butter lovers only; it would have made Elvis proud. It is based off my Mom’s Famous Banana bread, but I would argue it is even better than the original.

Serving Size: 1 loaf
Ingredients
2-3 very ripe bananas, peeled
1/2 cup butter, melted
1 cup sugar
1 egg
1 tablespoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 cup chocolate chips
1/3 cup peanut butter (mix in 1 tablespoon melted butter so the peanut butter is a ‘pourable’ consistency)
Instructions
Preheat the oven to 350, and prepare a loaf pan with melted butter and parchment paper.
Mash the ripe bananas until mostly smooth (I like to leave little chunks). Stir the melted butter into the mashed bananas.
Mix in the baking soda and salt and stir until combined.
Stir in the sugar, beaten egg, and vanilla extract.
Mix in the flour, then chocolate chips and stir until combined.
Pour the batter into your prepared loaf pan.
Pour the peanut butter mixture on top of the batter in the pan. Take a knife and gently mix (‘swirl’) the peanut butter into the batter.
Bake for 50-60 minutes or until a tester (I use a toothpick) inserted into the center comes out clean.
