Mom’s Famous Banana Bread
This equipment free banana bread is the easiest and best recipe you'll ever try. It is no wonder why my mom has become famous with all my friends because of this recipe.

Serving Size: 1 loaf
Ingredients
2-3 very ripe bananas, peeled
1/3 cup butter, melted
3/4 cup sugar
1 egg
1 tablespoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup chopped pecans (optional, can also be substituted with shredded coconut or chocolate chips)
Instructions
Preheat the oven to 350, and prepare a loaf pan with melted butter and parchment paper.
Mash the ripe bananas until mostly smooth (I like to leave little chunks). Stir the melted butter into the mashed bananas.
Mix in the baking soda and salt and stir until combined.
Stir in the sugar, beaten egg, and vanilla extract.
Mix in the flour, then pecans and stir until combined.
Pour the batter into your prepared loaf pan.
Bake for 50-60 minutes or until a tester (I use a toothpick) inserted into the center comes out clean.
