Lofthouse Inspired Cookies

There has never been a more divisive cookie (other than oatmeal raisin, maybe) that Lofthouse Sugar Cookies. You know, the ones that every grocery store has with the bright pink frosting? Well, these were some of my favorite cookies growing up and the only time I was allowed to have them was during a grade school class ‘party’. Now that I am an adult, I have remade one of my favorite childhood treats. Trust me when I say that if you do not like the store bought version, you are going to like these. After all, they are inspired off the original (but they wont crumble once you pick them up and have real ingredients that you can read in them).

Ingredients

Cookies

  • 1/2 cup unsalted butter, softened

  • 3/4 cup sugar

  • 2 large eggs

  • 2 teaspoons clear vanilla extract

  • 1 3/4 cups all purpose flour

  • 1 1/2 tablespoons cornstarch

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • pinch of salt

Frosting

  • 1/2 cup unsalted butter, softened

  • 1 teaspoon clear vanilla extract

  • 3 cups powdered sugar

  • 1 1/2 tablespoons cornstarch

  • pinch of salt

  • food coloring of your choice (optional)

  • candy sprinkles (optional)

Instructions

Cookies

  1. Beat the butter and sugar on medium-high speed until nice and creamy.

  2. Add eggs and vanilla and beat until incorporated.

  3. In a separate bowl, sift in the flour, cornstarch, baking soda, baking powder, and salt.

  4. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Do not over mix!

  5. Cover the bowl and refrigerate at least 1 hour.

  6. Preheat the oven to 375 degrees.

  7. Roll a ball of dough (about 1 tablespoon size) into a circle then gently press down into a disk shape (about 1/3-1/2 inch thick).

  8. Bake for 10-12 minutes or right before the cookies are beginning to become golden (they should still be pale).

Frosting

  1. Mix all ingredients until smooth and well combined. If the frosting is too thick, slowly add more cream (1 teaspoon at a time). Conversely, if the frosting is too watery, add powdered sugar.

  2. Let the cookies completely cool and then frost and add sprinkles.
